Brining was originally used for food preservation in the pre-refrigeration era. However, there are two solid reasons why you should brine your meat in this century: flavor and texture. Brining infuses the meat with amazing flavors, all the while tenderizing it to butter-soft texture. It’s a win-win!
First off you want to make sure you feed your fertility by purchasing an organic, preferably a pasture-raised turkey, that has fed on non-GMO grass. If you are going to brine your turkey you need to start thinking about thawing your frozen turkey about 2-4 days in advance depending, because brining takes 24-hours before roasting. If your turkey is frozen you will want to let it thaw out on a large dish. It’s size will dictate how long it will take for your frozen turkey to thaw out, sometimes it can take up to 2-3 full days for it to thaw completely especially if you live in a colder climate.

You basically prep a brine by stirring in salt and herbs together in a large stockpot. Once it cools you pour it over the turkey and then weight it down with a plates or something heavy, so the turkey stays submerged in the brine for 24-hours.
Once the brining process is complete then you’ll rinse the bird and prep it for roasting. The veggies you add using my recipe creates the most amazing gravy, trust me!
Then it’s all about SLOW ROASTING the turkey. I generally cook a 12-16 lb. turkey, and it usually cooks for about 10-12 hours at 225 degrees F. The turkey turns out golden, gorgeous, and delicious!
