Pasta makes faces smile in my house because it’s a treat! This Organic Gluten Free Penne Pasta with Lemon Chicken, Chard, and Carrots is one of two pasta dishes I make in our house as I don’t think pasta, gluten free or not, is such a good idea for health on a regular basis. Maybe once a month or even less often than that is alright with a strong healthy gut. My husband absolutely loves his Italian heritage and I think he loves pasta even more than that! Therefore, when I make this pasta dish he is thrilled and satisfied. Let’s be honest so is my daughter.
Pasta is a touchy topic around our home. I’d prefer we not eat it at all or if anything eat glucomannan noodles but I have to meet my family where they are at. If I was cooking for myself I would just pile this onto more vegetables, but having constant nutritional food policy wars around the house does not make for a peaceful home. So I give in making an organic lentil quinoa pasta that all our guts tolerate well.
I pack in two huge bunches of rainbow chard, tons of rainbow carrots, and crushed garlic into this recipe. Italian parmesan cheese from Parma is an essential ingredient for this recipe to taste utterly amazing.
Though called lemon chicken, this dish hardly has a lemon flavor. This pasta dish only uses 2 tablespoons of lemon juice.
Let’s talk olive oil, shall we! Most organic olive oil is full of cheap fillers like canola oil. Toxic olive oil is an international problem which includes olive oil from Italy and Greece. It depresses me to think about it. However, it energizes so many real farmers to make the good stuff, the real olive oil.
Another big issue with olive oil is the package. I generally love glass bottles, but unfortunately olive oil in a clear glass bottle is usually rancid because food items often travel far and the olive oil is exposed to too much light and heat. With tin, tinted glass, and plastic packages the olive oil is protected from the light. Nonetheless, I don’t favor the plastic because of the possible heat that can leach toxins into the oil, yet I still think it’s a better bet than the glass. Olive oil in the plastic package if put in proper storage can be just fine. Consequently, tin is by far the best because it blocks the light and doesn’t leach toxins when exposed to heat.
Purchase olive oil in bulk and directly from a farmer to save money as well as enjoy the benefits of packaging that benefits your olive oil. Keep olive oil for daily use in a small glass bottle and enjoy.
Finally, pour that pure olive oil all over this dish. Delight in plenty of leftovers for another meal for the whole family. Include a green leafy side salad with this dish and there will be plenty of food for everyone.
