These Gluten Free Chocolate Chip Cookies create cookie monsters in my house because they’re absolutely delicious and moist. They also efficiently use all that almond pulp leftover in the refrigerator from making almond milk resulting in a thrifty organic Mama!
I came up with these cookies years ago because my husband loves cookies and I wanted to get him off the Uncle Eddie’s Cookies, AND I wanted to use up my almond pulp from making fresh almond milk. Thank God, it was a hit! Therefore, these cookies have stuck around and have made a cookie monster out of my daughter as well. Raw whole organic oat groats make the girth of this cookie dough and most of all provide a clean gluten free base for these cookies. Due to all the unnecessary starches and tossing in of a million different ingredients that are not properly prepared in gluten free baking goods, they are generally super unhealthy. In addition, due to awful farming practices, the toxic chemicals and heavy metals found in grains is consequently high. Therefore, proper preparation methods through soaking grains and nuts is essential to remove most of these toxic elements.
Using 70-80% dark bittersweet chocolate chips for this recipe is not only delicious but also cuts down on the sugar content. Chocolate chips pair perfectly with the earthy flavor of the oat groats and the almond pulp so these cookies aren’t too sweet. You can even opt to take out the maple syrup in this recipe and just leave the sweetness of the chocolate chips to do the job. Additionally, using sugar free dark chocolate chips with monk fruit sweetener is my absolute favorite option.
This dough is not dry like classic cookie dough, rather it is very moist. Hence, you’ll become a pro at plopping this dough down on your baking sheets to make lovely rustic looking cookies.
