This Organic Baked Lemon Chicken Thyme in a pot is one of my go to recipes in our house. Bake in a cast iron pot because it really is the best and only way to cook a whole chicken! The chicken turns out so tender, juicy, and flavorful. Just throw the ingredients into the pot, let it cook for a couple of hours and boom, you have a beautiful, nutritious, and delicious meal. Plus, you let the oven do the work! It’s really that easy.
First, make sure you have a dutch oven. If you don’t, definitely invest in one because it will last you forever, and it will be of use in a household that truly cooks. Dutch ovens found these days are gorgeous, they don’t remind one of the traditional old black dutch ovens you place on coals. Rather, they are beautiful pots coated with enamel, easy to clean, yet still maintain their original purpose; to absorb and retain heat extremely well.
Next, find a quality chicken for your health. Sourcing pasture raised organic chickens would be the absolute best option, second best would be an organic chicken. I recommend nothing less than that unless you don’t mind the thought of getting sick later in life. If you agree then, look for chickens that haven’t been fed soy. Unless soy is fermented it’s not a good idea to consume it, for ourselves or for animals, as it wreaks havoc in the body. Particularly, the phystoestrogens within the soy are a concern. Additionally, soy is heavily genetically modified (GMO) so it’s a little difficult to really find Non-GMO free soy. The main point here is that chickens don’t naturally come into contact with soy in the wild. So why would a person eat chicken fed GMO soy? You want to eat chicken not turn into one, right?
Another benefit to baking in a pot is that you can throw in whatever veggies you want and they will slow cook along with the chicken. Including other side dishes or a salad with this meal would be a bonus, but you can put everything you want to cook in the pot and make it pretty complete on its own.
If you’re hard pressed on time and want good food to eat I feel this is a very doable meal. The only downside may be the cook time. Just take 10 minutes to prep ahead of time. Stick your pot in the oven, and if you’re lucky, like me, you may have an electric oven with a timer that allows you to set it and forget it! Once finished cooking you’ll walk into a home filled with amazing aromas.
Is there anyone drawn to cherry tomatoes like I am? I personally love to include cherry tomatoes in my baked chicken because it gives the dish juice that is bursting with flavor and creates a beautiful visual presentation to enjoy. These cherry tomatoes are simple because you just wash them and throw them in the pot. That goes for pretty much any produce in this dish. Also, I usually leave my pink potatoes whole as well but if they are a little large I may cut them in quarters or halves. The only produce I really had to prep was the garlic, and that just meant peeling off the skin! So easy!
I suggest a spice mix here that is really simple: salt, pepper, and dried thyme. However, there are so many different combinations of spices to use, so be creative for future baked chickens you might make.
Finally, once you finish the chicken all the way down to the bones SAVE THEM, as you can make your own bone broth! Preparing your own bone broth is not only easy but so inexpensive, the cleanest, and most properly prepared.
