The next time I make this hummus I’m going to be sure to make a double batch because this recipe though large, still only lasts for a few days in our home. It is essential that you soak and cook your own garbanzo beans rather than purchasing them in a can. Firstly, it allows you to have full control over your ingredients and preparation methods, and secondly the hummus just comes out so much better. Garbanzo beans in the can are never soaked or sprouted which is essential to gut health. In addition, the water that is used may not be something you would actually want to drink even if it says “filtered”. Lastly, I just try to stay away from cans period. Science is finding endocrin disruptors in BPA free cans so there really are no healthy can options. Just make the fresh stuff and you’ll be good to go on all fronts.
Hummus in our home is a labor of love. I preempt our hummus extravaganza by soaking the hummus in warm water for about 1 1/2-2 days, and I change the water at least twice a day.
